Mouse Droppings And 19 Other Violations: Vienna Restaurant Inspections
One restaurant was cited for mouse droppings among 20 violations. During recent inspections, restaurants had no violations or up to 21.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on reports in March and April around the Town of Vienna. Of note, Amma Vegetarian Kitchen had 20 violations, including mouse droppings. Health inspectors recommended increasing pest control service to weekly until the pest activity is under control. Another notable result was 21 violations at Clarity.

- Observed that THE WASTE WATER DRAIN PIPES UNDER THE 3-COMPARTMENT SINK ARE SOILED WITH DEBRIS and are in need of cleaning.
- The interior and exterior surfaces of the mechanical warewashing machine are soiled with food limescale that may decrease the effectiveness of the unit.
- Observed that toilet room doors are being kept open. TYHE self-closing devices on both doors do not self-close.
- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: THE TWO-DRAWER LOWBOY UNIT LOCATED ON THE COOK LINE, NEXT TO THE STEAM TABLE.
- The following food items that are not easily identified by appearance were observed without a label: SALT AND BLACK PEPPER NOTED IN UNMARKED CONTAINERS , AT THE FOOD LINE.
- Observed the following food thawing using an improper method: SOAKING SHRIMPS IN STAGNANT WATER AT THE SINK.

- Observed unused equipment and kitchen supplies being stored outside of the facility around the dumpster area and at the back door.
- : Observed a milk jug being used to store a green sauce in the 1DR under counter cooler (front, left).
- Observed the work surfaces, exterior of coolers and cooler handles, under equipment, etc. with an accumulation of dirt and grime.
- The dumpster was observed with a missing door.
- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: 1) 1DR glass display cooler next to the cash register; 2) 1DR under counter cooler (front, left).
- Observed a visible gap a the bottom of the back door.
- Dispensing and/or in-use utensils improperly stored between use as follows: 1) large flat spatula stored in water at the cook line; 2) rice scoop stored in water at the rice warmer; 3) cups, bowls, small take out containers, etc. stored in bulk bins of salt, sugar, coconut flakes, etc.

- EHS observed no written procedures for vomit and diarrhea cleanup.
- EHS observed mechanical ware washing machine not being operated per the dat plate. Data stated there was required 50ppm of CL for wash rinse and sanitize cycle. EHS observed CL at 0ppm.

- The permit holder is not in compliance with the HACCP plans and procedures that were submitted as specified in 8-201.14 and approved as a basis for the modification or waiver.

- Observed that paper towels were not provided at the ANNEX KITCHEN area handwashing sink.
- A review of the menu with the foodservice operator indicates that there is no consumer advisory for the following food item(s) that may be served raw and/or undercooked: THE ASTERISK IS MISSING FROM THE FOLLOWING FOODS ON THE BRUNCH, LUNCH AND DINNER MENUS: 1) QUAIL EGG, 2) REGULAR EGGS (E.G. POACHED, ETC), 3) SALMON, 4) SMOKED SALMON, 5) SHRIMP, 6) HALIBUT, 7) SOME BEEF ITEMS.
- Observed that some kitchen ceiling panels are not maintained in good repair. Observed small gaps/holes in the panels where electrical, plumbing, and other wiring is located.
- There was no temperature measuring device located in the following cold holding equipment: 1) 4DWR/1DR PREP TOP REFRIGERATOR (OPEN KITCHEN ON RIGHT SIDE), 2) BEVERAGE AIR 1DOOR UNDER COUNTER REFRIGERATOR (DESSERT STATION).
- Openings to the exterior of the building are present along the DOOR ON THE STORAGE SPACE (located outside).
- Dispensing and/or in-use utensils improperly stored between use as follows: 1) IN-USE UTENSILS IN WATER THAT IS NOT MAINTAINED AT 135F OR ABOVE.
- The following food items that are not easily identified by appearance were observed without a label: 1) WORKING CONTAINERS OF FOODS SUCH AS: A) DRY SEASONINGS, B) OILS, C) HONEY, D) BITTERS, E) CHEESES, F) SALTED BUTTER, ETC.
- Observed plastic quart cups and half quart containers stacked while wet after cleaning and chemical sanitization.
- Observed that sign or poster that notifies food employees to wash their hands is not provided or is not clearly visible in the women’s restroom.
- The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: 1) ALUMINUM LINING SURFACES OF THE RANGE AT THE COOK LINE.
- The following equipment is not operating properly and/or is in poor repair: 1) CHEMICAL SANITIZING DISH MACHINE IN THE KITCHEN IS NOT DELIVERING THE CHLORINE SANITIZER AS REQUIRED.
- The establishment has not posted the 2025 Food Establishment Health Department permit to operate in a conspicuous location.
- Clean equipment/utensils were found stored in the mechanical closet (near the dish washing area).
- Employees observed working in the food service area without proper beard restraints.
- Milk crate(s) found used for the following purpose(s): 1) ELEVATE ITEMS OFF THE FLOOR IN THE OUTSIDE STORAGE UNIT.
