22 Violations At Restaurant: Woodbridge Restaurant Inspections

WOODBRIDGE, VA — Health inspectors found up to 22 violations at some restaurants during recent inspections in the Woodbridge area.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. • The handwashing sink in the coffee area was blocked by black Magic Chef reach-in refrigerator.
• Raw shell eggs were observed to be stored adjacent to ready to eat (RTE) dairy items (cream) in walk-in cooler.
• Raw animal proteins stored improperly in walk-in cooler.
• Tongs for handling foods being cooked on the grill top were observed to be stored hanging in the adjacent trash can.
• Spray bottles of chemicals were stored near clean equipment in the food establishment. Cleaners were observed stored near the raw wood shelving of soda syrups.
• Spray bottles of chemicals stored near the clean plates in the kitched were unlabeled.
• Guacamole and sliced tomatoes that were prepared just prior to the inspection (10:30am) were found cooling on top of the 2 door prep reach-in refrigeration unit (salads) at 57 and 50 degrees F, respectively. Guacamole prepared just prior to the inspection (10:30am) found cooling in covered container in walk-in cooler.
• Tortillas shells for taco salads stored along the cookline were observed to be stored uncovered and subject to contamination.
• Employees handling food were observed to not be wearing proper hair restraints.
• Clean equipment (lexan containers) were stored stacked and wet on the clean equipment storage shelf.
• Single service containers were observed in the bulk food storage containers being continuously re-used as scoops.
• Large single use oil containers were observed to be cleaned and ready for reuse for margarita mixes at the bar. Sour cream containers were observed to be cleaned and ready for reuse for the storage of other foods throughout the food establishment.
• Observed cardboard being used on shelving under prep tables along back cookline. Observed foil being used on equipment along front cookline.
• Several pieces of equipment were observed to be either in disrepair or not in use during the inspection to include: Turbo Air open air display refrigerator in the carryout area, True Soho Natural 1 door upright refrigerator in the main kitchen, the black Magic Chef reach-in refrigerator in the coffee area, the 2 drawer reach-in refrigerator along the back cookline and the party room beer cooler.
• Observed that a new raw wood shelving unit has been constructed in the kitchen for the storage of soda syrups. Observed that raw wood is used on the dunnage rack along the back cookline.
• A wooden cutting board is being used as a food contact surface on the 2 door prep reach-in refrigerator (salads).
• Large blue bulk food containers (rice, beans) are not food contact equipment and are not properly designed for use with food. In addition, the large blue bulk food containers are in disrepair (broken lids) and have food debris on various components that are not easily cleanable.
• Plastic wrap has been used to extend the original wastewater pipes of the 3 compartment sink down into the floor drain, eliminating the air gaps.
• Various light bulbs in the back cookline hood system burnt out and/or missing. Light missing in walk-in freezer.

• Observed the red and white cutting boards in need or replacement or resurfacing.
• There was no test strips or other device present to measure the final sanitization temperature or chemical concentration at the dishwashing machine. Per the person in charge the dishwashing machine does both heat and chemical sanitization.
• There was no test strips at the 3 compartments sink to measure the chemical concentration of the sanitizer solution.
