Simma's Classic Cheesecake Eggs a Tosa Easter Tradition

Easter eggs and baskets made of bakery's famous cheesecake are flying out the doors, but don't forget that Simma's is closed Easter Sunday.

How long has Simma's Bakery been making special egg-shaped cheesecakes for Easter?

"As long as I've been here," said production manager Amy Siegel, "and I've been here 25 years."

Simma's, at 817 N. 68th St., is not keeping its usual Sunday hours this weekend, so know that you should "plan accordingly," as a notice on the door says.

The bakery keeps some of the big chocolate-coated Easter Egg cakes on hand for walk-ins (just check the cooler), but if you want one, and want to be sure of having it on Easter Sunday, you can still place an order at the counter or by phone through 6 p.m. closing Friday.

Simma's will be open Saturday, as usual, from 7 a.m. to 5 p.m. for pickup.

Siegel says the egg-shaped cakes – built like all Simma's cheesecakes on a layer of devil's food, then raspberry filling, topped with the cheesecake and all of that coated in either white or dark chocolate ganache – cost $25 and provide about 10 servings.

"They're very popular," Siegel said, "as are our cheesecake Easter Baskets."

Ah, yes, the baskets. For a bit more money – $41.50 for an 8-inch cake, $55 for a 10-incher – you get a cheesecake decorated in buttercream frosting to look like a woven basket, completed with braided (and edible) handle, filled either with candy or fresh strawberries.

And how many calories?

"Oh, I have no idea," Siegel said. "Let's say we take them out for Easter."
