Lilo Restaurant Opens Soon In Carlsbad Village, A Chef's Experience

CARLSBAD, CA—Lilo, a restaurant planned for Carlsbad Village, will open on April 17 at 2571 Roosevelt St. in Carlsbad. Its hours of operation are expected to be from 5 p.m. to 11 p.m., Tuesday through Saturday. The website has opened for reservations.

Lilo offers a unique, signature dining experience. It is the brainchild of Carlsbad-based restaurateur John Resnick and chef Eric Bost. The restaurant will feature coastal, international fare and seat approximately 22 diners in an intimate, chef-oriented setting.

Resnick and Bost have planned a 12-course tasting menu, beginning at $265, not including tax or gratuity. Beverage pairings will also be available.

The restaurant's website says this is a " lively and immersive dining experience that welcomes you to celebrate life’s special moments, Lilo harnesses the untamed spirit of the California coast and the world's shorelines through a curated, multi-course tasting menu rooted in a thoughtful connection to nature, served around the chef’s counter."

According to Restaurant Hospitality, "Lilo’s tasting menu will evolve with the seasons, customers can expect to start the dining experience with a selection of canapés, such as the Tartlet of Spring Peas charred in the hearth and served with fresh cheese, egg yolk jam, shiso flower, and Osetra caviar, and a Gougère Waffle with 24-month-aged compté, maple, and lardo."

Lilo will feature 14 seats at a chef's counter, two chef's tables, and an open kitchen. Dining here will be an interactive experience that will not be forgotten, according to Bost and Resnick, over Instagram. Together with the Lilo team, they shared their open invitation to all.
