I’ll confess it: I have a love-hate relationship with Thanksgiving.
I cherish enjoying a delicious meal while creating family memories, and taking stock of all the good things in life. But I could do without the stress of frantically trying to pull together a zillion side dishes, while spending hours sweating over an oven, basting a turkey. And let's just be honest here — there's a good chance that the bird will turn out dry anyway, despite your best efforts.

This year, treat yourself to a no-sweat (or, at least, a less-stress) Thanksgiving dinner with this recipe for a 30-minute Instant Pot or pressure cooker turkey seasoned with herbs and steamed in ale. It's so tender, it's falling off the bone and comes with a bonus side dish: stewed veggies!
And don't forget the chorizo-fig sourdough stuffing — a tangy, sweet and smoky twist on a holiday favorite — that can be made the day before you serve your Thanksgiving feast.

30-Minute Instant Pot Turkey
If you go with a smaller breast, you'll only need about 30 minutes in your pressure cooker. If you go for something larger, you'll want to add another 5 to 10 minutes onto the cooking time. Be sure to completely defrost your bird and remember that a meat thermometer is the best way to ensure everything is good to go.
If you want a nice, traditional golden glow on your turkey, briefly pop it in the broiler.

- Turkey breast
- Onion
- Celery
- Carrot
- Chicken stock
- Beer (optional)
- Bay leafs
- Butter
- Rosemary
- Thyme
- Garlic Powder
- Lemon
- Salt and pepper

Chorizo-Fig Sourdough Stuffing
To me, a good stuffing is herby, savory, moist and a little bit sweet. I’m also partial to the mouthwatering tang of a sourdough loaf. It adds a whole new dimension to this holiday classic.
This stuffing has all the cozy and familiar flavors of Thanksgiving — sage, celery, carrots, chicken stock — but with a sweet and smoky take thanks to dried figs and chorizo sausage. It’s got a nice crunch on top with a moist underbelly.
This can easily be made ahead and reheated in the oven when you're ready to sit down for your Thanksgiving meal.
Here's what you'll need:
- Sourdough loaf (ideally stale)
- Carrot
- Onion
- Celery
- Chorizo sausage
- Dried figs
- Sage
- Chicken stock
- Salt and pepper
- Cooking spray/butter/oil (for greasing pan)
