Barbecue With a Sweet Kick

With Memorial Day around the corner, Hermosa Beach Patch editor shares her father's favorite barbecued chipotle beef ribs recipe.

As my Memorial Day treat to all of you, I'm going to share one way to spice up your holiday weekend—savoring these special barbecued chipotle beef ribs.

My father has normally remained tight-lipped about these rub and chipotle sauce recipes that give the ribs a tasty kick. But as they're too sweet to keep secret, he has broken his silence.

"This is my favorite rub because the pepper, chili, and brown sugar provide a sweet spice with energy," he said.

Barbecued Chipotle Beef Ribs 

Ingredients:

2 pounds beef ribs (or baby back pork ribs) 

Rub:    

1/3 cup brown sugar           

1 teaspoon chili powder           

1 teaspoon salt           

1/2 teaspoon ground black pepper 

Sauce:    

1/4 cup orange marmalade               

2 chipotle peppers, minced               

1 tablespoon worcestershire sauce               

1 teaspoon hot sauce 

Prep Time: 15 minutes

Cook time: 2 hours 

Combine all sauce ingredients and bring to a boil. Allow to simmer and then cool. 

Combine rub ingredients in a bowl. Apply rub all over individual fat-trimmed ribs. Place ribs on preheated grill over medium low heat for about two hours. Use half of the chipotle sauce to base ribs every 15 minutes. Save the rest of the sauce to serve with ribs.
