Oceanside Rubio's Restaurant​ To Reopen After Devastating Fire

The custom-designed location serves as Rubio's prototype restaurant, representing the wave of the future for the company.

OCEANSIDE, CA — Tuesday will be a very special Taco Tuesday at Rubio's Coastal Grill in Oceanside.

The remodeled Oceanside location will officially reopen its doors after being closed since a fire destroyed the building in 2021. The custom-designed eatery, located at 4201 Oceanside Blvd., will serve as Rubio's prototype restaurant, representing the wave of the future for the company.

The restaurant's design was inspired by the Baja taco stands where Rubio's co-founder and owner, Ralph Rubio, first ate fish tacos as a college student 41 years ago. The eatery features art and decor showcasing his trips to San Felipe. The location also has a dedicated mobile ordering pickup area and brand-new patio seating.

"Our goal in creating a prototype Rubio's in Oceanside was to connect our signature Baja-inspired food, centered around our best-selling Original Fish Taco, with laid-back, beach vibes reflective of the Baja lifestyle," Ralph Rubio told Patch. "It's a warm, distinctively Rubio's dining experience for the supportive Oceanside community to come back, relax and enjoy. We can't wait to welcome everyone."

Oceanside Rubio's will begin serving guests at 10:30 a.m., with a special grand reopening party taking place from 4:30-7:30 p.m. The event will feature live music, complimentary sweet treats, Rubio's giveaways, and a kids' craft table featuring Rubio's canvas bags with stencils and markers. In addition, half of the grand reopening profits will go to the Boys & Girls Club of Northwest San Diego.

Headquartered in Carlsbad, Rubio's operates 86 restaurants across Southern California, Arizona and Nevada.

Although the company recently closed 48 underperforming locations across the state, the Oceanside location is one of the fast casual restaurant chain's most popular locations, according to the company. As a thank you to customers, all rewards members will receive 500 bonus points in the Rubio's app after purchase during grand reopening week.
