Laddie's Baked Pepper Poppers: Reader Recipe Of The Week
Crispy, savory, creamy: Check out the recipe for this simple vegetarian snack.
Cooking with Courtney is bringing you a fun vegetarian snack thanks to Pleasanton Patch reader Laddie: baked pepper poppers stuffed with yummy goodness such as garlic, cheese, herbs and bread crumbs.
"These simple, tasty and fun pepper poppers are the ultimate snack….crispy on the top and packed with delicious savory flavor," she told Patch.
Laddie said she was inspired to whip this recipe up after finding gorgeous banana peppers at the farmers market.

Ingredients
- Banana peppers, halved lengthwise and deseeded
- Yogurt and/or cream cheese
- Garlic, minced
- Cheese of your choice
- Chives
- Parsley
- Bread crumbs
- Panko
- Salt & Pepper
Instructions
- Mix all the ingredients (except for peppers) together.
- Spoon the mixture into the peppers and drizzle with olive oil.
- Bake for 15 minutes on 425F until they are golden brown and peppers are tender.
"And there you have some amazing pepper poppers," she said.
