LONGMONT, CO -- Did you know that with proper storage, you could enjoy Colorado-grown butternut squash, garlic, potatoes and fuji apples until April? It's true, but such a feat will require advance planning – and perhaps a trip to the Boulder County Farmers' Market Winter Market this weekend at the county fairgrounds in Longmont.

Root vegetables like beets, potatoes, turnips, onions will be available, and many farmers will offer bulk discounts. Other treats will include winter squash and fresh greens from farmers who have a protected growing space. Vegetable vendors will include Acres at Warren Tech, Aspen Moon Farm, Cure Organic Farm, Ollin Farms, Honeyacres, Oxford Gardens, Rocky Mountain Fresh and Toohey & Sons Organic.

Many of your favorite local ranchers will also be at market this weekend, so clean out your freezer before you come to stock up on humanely and sustainably raised pork, beef, bison, chicken, and eggs.
