Wave Hill Breads To Open New Retail Space In Norwalk
Wave Hill Breads, an artisan micro-bakery in Norwalk, plans to open a new 3,000-square-foot retail space on Westport Avenue.
NORWALK, CT — Wave Hill Breads, an artisan micro-bakery located on High Street in Norwalk, plans to open a new 3,000-square-foot retail space on Westport Avenue.
Co-Owner Angela Topi confirmed to Patch plans to open a the new retail space, which will also include kitchen space and two back rooms for educational workshops and team building events, at 239 Westport Avenue.
Though an official opening date has not been set yet, Topi teased the new Wave Hill space will soon be ready to open.

"We feel that there is a need for fresh, local, high-quality artisan food on the best bread around," Topi said to Patch. "Also, our wonderful and loyal customers kept asking us to open up a retail space."
Wave Hill currently sells breads, pastries and other items from its High Street bakery, which Topi said will still be the main production facility for their wholesale accounts and farmer's markets while the new Westport Avenue facility will mainly be used for retail.

"Baking will occur on site [on Westport Avenue] strictly for retail purposes, no wholesale interference, baked fresh daily," Topi said. "We will offer catering services down the line."
According to Topi, the Westport Avenue space's close proximity to the High Street bakery made it an enticing opportunity for a new Wave Hill location.
"It's just a mere two miles away from our current facility on High Street," Topi said. "In addition, Norwalk is a focal point for so many nearby towns, which harbors many of our amazing customers."
Customers who are already fans of Wave Hill will now be able to get their favorite products at the much larger Westport Avenue facility, according to Topi.
"All of the same products from our High Street bakery will be offered at the retail space, plus exclusive items as well," Topi said. "We will also be selling local and imported specialty artisan products."
In additional to operating their first retail location, Topi said Wave Hill plans to host educational bread and cooking classes, birthday parties, private events and other events at the new Westport Avenue location.
Wave Hill Breads opened in Wilton in 2005 before moving to High Street in 2011, according to the bakery's website.
Topi and her husband, head baker Tim, purchased the bakery from previous owners Margaret Sapir and Mitch Rapoport in September 2015.
In addition to a wide variety of specialty breads, including a ciabatta with olives and roasted red peppers and a whole grain multi-grain boule, the bakery also offers pastries such as cookies, muffins and hand-shaped croissants among other products.
Wave Hill products can often also be found at various local farmer's markets and in a number of area stores and restaurants.
