Rollin' in the Dough Delivers Home-Baked Flavor

Kathy Schrader is in the business of baking.

Schrader is owner of Kathy’s Rollin’ In the Dough bakery, a new business that opened at 5032 Grand Blvd. in New Port Richey. Early in the mornings, before the doors open, she drives to town from Spring Hill to bake a fresh selection of treats for customers.

The display cases are full of the fruits of her labor and that of her friend Missy Donataccio, who helps out at the business. There are cakes and cupcakes and Key lime bars, truffle pastries, the occasional bread sometimes, tarts, cookies and pies, which are her specialty along with cinnamon rolls.

She also makes specialty dog treats created from wheat and rolled oats.

This is Schrader’s first bakery, but she’s no stranger to business or baking. She used to own Schrader’s Ultra Buff in Largo, where she did finishwork on aluminum, including race cars.

That was years ago. The business closed and she left the working world to take care of her children. She baked for them a lot, making treats that included the cinnamon rolls she still creates today. Baking runs in the family, and Schrader uses usome of her mother's recipes. 

Now that her sons are grown, Schrader had more free time. One of her sons is in the Army and the other is in culinary school.

“I just wanted to open a bakery. I really did,” she said.

Schrader also credits as inspiration for her business a visit to a bakery in Sterling, N.J., during a trip to see family. She noticed that it offered only fresh baked goods and had a comfortable, home-cooking feel.

Those are things Schrader tries to offer at her shop, she said. She bakes fresh goods daily.

Schrader said her bakery opened March 24, during Chasco Fiesta, which she and her family have attended regularly.

Schrader said her bakery brings a distinct flavor to the area.

“They don’t have a bakery like us,” she said. “We’re not an Italian bakery. We’re like Grandma's home cooking,” she said.

Want to try some of “Grandma’s home cooking” at Kathy’s Rollin’ in the Dough?  The bakery is open Monday from 10 a.m. to 5 p.m., Tuesday through Friday from 7 a.m. to 5 p.m. and Saturday from 9 a.m. to 3 p.m. It is closed on Sundays.
