James-Beard Nominated Restaurateurs To Bring Japanese Concept To Upscale FL Mall
James-Beard nominated restaurateurs who have a Michelin star are opening an upscale, modern Japanese restaurant in the UTC area.

SARASOTA, FL — A modern Japanese dining experience from James Beard-nominated restaurateurs Jimmy and Johnny Tung is coming to the Sarasota area later this year.
Zōtō, a restaurant concept blending Japanese bar culture and culinary tradition, will bring an upscale izakaya experience to the University Town Center, according to a news release.
The contemporary restaurant will open at 190 N. Cattlemen Road, next to Shake Shack.

The menu will offer premium sushi, Japanese sharing plates and craft cocktails.
“Slated for reveal closer to opening, Zōtō’s menu will feature elevated interpretations of Japanese fare — thoughtfully plated, seasonally driven, and perfectly paired with a comprehensive beverage program featuring Japanese whisky, Asian beers, premium sake, an extensive wine list, and Japanese-inspired cocktails by mixologist Mike Western, (the beverage director for Kōsen in Tampa Heights,)” the news release said.

Zōtō will be led by executive chef Lwin Siss. Raised in Miami with more than 15 years of industry experience, Siss launched his career at Blue Ribbon Sushi in South Beach, which paved the way for executive roles at acclaimed Miami restaurants Novikov and Komodo.
He later moved on to Michelin-recognized kitchens, including Norigami and Kōsen, which is also operated by Jimmy and Johnny Tung.
“After seeing the response to Kōsen, we knew we wanted to expand our presence in the Tampa Bay area,” Johnny Tung said. “Sarasota has world-class beaches, and is on the rise as a top travel destination. It just felt like the right move.”
Designed by Jacob Portillo, the restaurant will include a 60-seat dining room and a 50-seat outdoor patio.
Zōtō’s interior is inspired by contemporary Japanese minimalism, pairing natural textures with intentional lighting and sculptural details, the news release said. The space, dark and moody, is framed by soft oak wall panels, woven ceiling elements, natural greenery and a glowing central bar that anchors the room.
“Zōtō was designed to feel both intimate and open — a space that respects quiet moments, but also buzzes with energy around the bar,” Johnny said.
Zōtō is expected to open this summer, and will mark the first chapter of a two-part project. Phase two will unveil a hidden omakase room called Yūgen, offering a more intimate chef’s table experience.
