Observed shell eggs touching ready to eat food in walk in cooler. CA: Food in cooler drawers and walk in cooler was rearranged according to cook temperature. Barriers were added to separate raw animal foods. Shrimp and beef were cooked to 165 degrees Fahrenheit.
• Observed potentially hazardous foods (tomatoes, lettuce) stored at greater than 41 degrees Fahrenheit. CA: Food had been held for more than four hours and was discarded.
• Observed several items of food service equipment stacked and stored wet. CA: Discussed proper air drying methods with PIC.

Sauce was still in the time parameter to be cooled back down, sauce was moved to the walk-in cooler.
• Observed potentially hazardous food (butter) cold held at greater than 41 degrees Fahrenheit on counter near grill. CA: Informed PIC the time as a public health control policy can be used or butter should be held at 41 degrees or below. Butter was still in the time parameter to be cooled back down, was moved to the walk-in cooler.
• Observed employee without a proper hair restraint. CA: Informed PIC that a hat or hair net should be worn while actively handling or prepping food.
• Observed food employee wearing jewelry (watch, bracelets) other than a plain ring on their hands/arms while preparing food. CA: Pointed out to PIC, items were removed.
• Observed employee water bottle stored under counter in front food service area. CA: Informed PIC that employee drinks must be stored in a disposable cup with lid and straw, if to be consumed in the kitchen or prep area.
• Remarks: Items in walk-in cooler were frozen, cooler was being repaired on-site; provided time as a public health control form; no raw food was cooked during time of inspection.
