  • Person in charge lacks awareness in key areas of risk factor control (using time temperature as a public health control) or good retail practices for establishment. CA: Persons in charge, managers or CFSM must be properly trained or retrained.
  • Observed multiple employees exit the kitchen, then return and begin preparing/cooking food without first washing hands. CA: Employees need training on when to wash.
  • Observed employee drinks not stored in single use beverage containers with lid and straw. CA: Discussed with PIC that drinks must be stored in single use containers with lid and straw. Drinks were discarded.
  • Observed raw pork stored touching raw beef in reach in cooler under grill. Observed raw chicken touching raw milk in reach in cooler beside grill. Observed raw eggs stored above ready to eat foods in walk-in cooler. CA: Employees need training on proper separation by cook temperatures. Will return to facility for a training.
  • Observed potentially hazardous foods not stored at 41°F or below (blue cheese dressing: 57°F, garlic sauce: 78°F, medium sauce: 73°F). CA: Items were rapidly cooled to 41°F or below since they had been stored above 41°F for less than 4 hours. Time as public health control was previously discussed with PIC. Will discuss again, provide training to employees, and discuss the possibility of a product assessment.
  • Observed potentially hazardous foods not stored at 135°F or higher (cooked chicken tenders: 109°F, 125°F). CA: PIC reheated chicken tenders to 165°F immediately since they were stored out of temperature for less than 4 hours.
  • A follow-up inspection was scheduled, but no date was provided.
