• Observed several TCS foods not being held at 41 F or below for cold holding. Advised PIC that all TCS foods cold holding must be held at 41 F or below. Foods were discarded.
• Observed several TCS food held longer than 24 hours not marked with prepared date or discard date. Advised PIC to date mark any TCS foods held longer than 24 hours.
• Observed fish thawed in reduced oxygen packaging. Advised PIC that any fish in reduced oxygen packaging must be removed from packaging before being thawed by approved thawing method. Fish was removed from reduced oxygen packaging.
• Observed wiping cloths not stored in chemical sanitizer. Wiping cloths were stored on employee apron and countertop. Advised PIC wiping cloths must be stored in chemical sanitizer between use. COS- wiping cloth placed in sanitizer.
