Thai Diner Barely Misses an A: Restaurant Inspections July 8

An employee was caught changing the time stickers on food at the Thai restaurant at Sugarloaf Mills.

Violations: 6-1A, Violation of Code: [.04(6)(f) ] Several items were found cold holding at a temperature of above 41 degrees with no time controls in place. The person in charge moved some items to ice bath (noodles, chicken, pork) and discarded items that were in cooler overnight such as cream cheese, and craw fish salad. All items held cold must be held at 41 degrees and below to help prevent possible contamination.  Corrected On-Site.  New Violation. 6-1D, Violation of Code: [.04(6)(i) ] Employee observed changing time stickers on items that were on time control without changing the food item. The employee was asked to discard these items including pooled eggs and bean sprouts and placed new items on time control that started off at 41 degrees and placed the proper discard time on these items. In addition, a container of sushi rice on time control was not marked at the start of the inspection. The person in charge properly marked this item. The written procedure for time control states that items will be held for maximum of 4 hours at room temperature and discarded at the end of the time period. All items must be discarded at the end of this time period and new items must be placed with proper time stickers in place.  Corrected On-Site.  Repeat Violation.
