• Observed cooked breaded chicken patties not held at 135 degrees Fahrenheit or above. CA: Items were discarded onsite. All hot held items must maintain temperatures of 135 degrees F or higher. Inspector advised maintenance be performed on heat lamp.
• Observed food held past time marked when using time as public health control at assembly station. CA: Items were discarded onsite. When time is used as a public health control, item must be discarded at or before the time marking.
• Observed precooked chicken stored in walk-in cooler past its noted discard date. CA: Chicken was discarded onsite. Date marked items must be discarded within 7 days or in a shorter time frame established within facility.
• Observed build up of grease debris along non-food contact surfaces throughout main kitchen area. CA: Non-food contact surfaces must be cleaned to sight and touch.
