The Cherokee County Environmental Health Department conducted food service inspections Dec. 26 through Jan. 3 at the following establishments:

• Observed sushi rice in warmer in sushi bar at 98°F. Rice was discarded. A time system is implied for the rice, however, no time was marked on the rice (written procedure is available). The four-hour discard time must be placed with rice (each batch).
• Cooked rice placed into walk-in in ~8" deep plastic tub. After 2 hours, rice was still 135°F in center. Rice was portioned into 2 containers and loosely covered to allow for proper cooling. After ~40 minutes, rice was 74°F in center. Ensure an effective method is used for cooling cooked foods quickly and meets the requirements for cooling in the rule.
• Remarks: ensure all staff members understand and have signed the health policy (policy has been provided in multiple languages to operator); follow proper storage order for raw foods as discussed; do not modify cooking utensils with pieces of wood; purchase properly designed equipment made w/cleanable materials; add asterisk to special order sushi menu for raw items; add asterisk for all steak items on regular menu; and replace top missing lids on dumpster.
