Kristi Loucks, who operated the Lake Bluff shop, will be reopening as Wildflour Baking Company at 950 Western Avenue in Lake Forest. She promises familiar faces and treats to her customers and hopes to be doing business within a month.

“We are thrilled to be re-opening in Lake Forest and excited to see some new and familiar faces,” Loucks said. One of those recognizable bakers in addition to Loucks will be Annie Rath. Both grew up in Lake Forest and were part of Wildflour since its 2009 opening.

The name was changed because in addition to operating as a retail bakery, Wildflour will have a commercial branch offering pastries and baked goods to restaurants as well as customers who walk in the door.

“(We) will serve as a retail bakery for breads, sweets, our outrageous sculpted celebration cakes,” Loucks said. “(We will be) hosting classes and birthday parties as well as commercial baking for area restaurants.” She is also promising a 24-hour turn around on some special orders.

Loucks is a graduate of Le Cordon Bleu Chicago and Rath graduated from Boston University with a degree in hospitality management.
