Manhattan's Peaceful Grounds Coffee Company Set To Open
The mother-daughter, stepfather and brother team behind Peaceful Grounds Coffee will celebrate its soft opening on Saturday, Dec. 7.

MANHATTAN, IL — Just in time for Manhattan's Christmas festivities, the town's newest business addition is set to open its doors.
Manhattan residents Holly Barajas with her brother Jonathan Tough, their mother Cheryl and stepfather Paul Wellman have cleared the final hurdles, and will debut their Peaceful Grounds Coffee Company in a soft opening Saturday, Dec. 7.
The group moved fast in the space at 25626 S. Gougar Rd.—they announced their plans in mid-October—and recently passed their final inspections with Will County and Manhattan officials, Barajas told Patch.

Peaceful Grounds will be open with a limited menu Saturday from 9 a.m. to 2 p.m. The shop will then close and re-open Wednesday, Dec. 11. Standard hours will then be 6:30 a.m. to 6:30 p.m. Monday through Friday, 9 a.m. to 2 p.m. Saturday, and 9 a.m. to 12 p.m. Sunday.

"We would just like to express our deepest gratitude to all of our construction crews, friends and family who helped us," Barajas told Patch. "Kevin Schuster of Midtown Bar for acting as our mentor and advisor, and the Village of Manhattan for being so helpful to us during the process.
"Our family is so happy to finally open to our neighbors and surrounding communities."
The opening adds to an exciting weekend lineup for Manhattan, as the town welcomes the holiday season with Round Barn's Winter Fest and Christmas On State festivities.
