Manhattan's Peaceful Grounds Coffee Nears Opening, Owners Hiring Now

A potential soft opening is set for early-December, and they still have staff spots to fill.

MANHATTAN, IL — A new coffee spot in Manhattan is nearing its opening date, with final preparations just days away.

Manhattan residents Holly Barajas with her brother Jonathan Tough, her mother Cheryl and stepfather Paul Wellman are eager to open their Peaceful Grounds Coffee Company, coming to 25626 S. Gougar Rd. They're hiring now, with an application available online.

They're hopeful for a Dec. 7 soft opening, pending final inspections.

"We’re really excited," Barajas told Patch previously, "and we can’t wait to meet everybody and get started."

The project combines the family members' enthusiasm for a sip of something piping hot, with a deep appreciation for the small town they've embraced as home.

Barajas and her brother grew up in nearby New Lenox; her stepfather grew up in Mokena. All three are Lincoln-Way Central alumni. The family also owns Frankfort-based Integrity Manufacturing, Inc. When it came time to choose a location to stake out their Peaceful Grounds, Manhattan seemed a natural fit.

"We thought why not do something fun in town, so we can be a part of the town we love still," Barajas said.

Peaceful Grounds will offer a cozy atmosphere, and a menu featuring a variety of light breakfast and lunch sandwiches, in addition to its fresh coffee and tea selections.

Openings currently available include 6 a.m. to 1 p.m., and 9:30 a.m. to 3:30 p.m. Find the application online.
