Potbelly Sandwich Shop Set to Open This Summer

There is a new restaurant coming into Wayside plaza.

Renovations are underway for a new sandwich shop in Wayside plaza at 6 Wayside Road. 

As reported on Burlington Patch, Potbelly Sandwich Shop is going into the location previously occupied by Fresh City.

Though the sign on the window states the restaurant will open this Spring, Patch was told by Jacque Harness of Noble, the public relations company for the restaurant chain, that Potbelly is slated to open this summer. An exact opening date has not yet been set.

According to the Potbelly Sandwich Shop website, the Chicago-based company began in 1977 as a small antique store run by a nice young couple who decided to boost their sales by selling sandwiches. The sandwich shop, with quick service, offers a variety of hot and cold sandwich options made from fresh cut meats and vegetables. The store also offers cookies, milk shakes, soups and salads.

Potbelly is not the only restaurant slated to open in Wayside this summer. As reported on Burlington Patch, Season's 52 is set to open this summer in the old Borders location at 6 Wayside Road.

According to the Season's 52 website, the higher-end restaurant offers a variety of seasonally-inspired menu options. Entrees include Cedar Plank Atlantic Salmon, Caramelized Sea Scallops, Garlic Chicken Flatbread, Roasted Crab-Stuffed Shrimp, Ripe Plum Tomato Flatbread, Grilled Rack of New Zealand Lamb and the Char Crust Filet Mignon.

The new restaurants are part of a larger plan at Wayside.

Thomas Wilder of The Wilder Companies out of Boston, the company that handles management and leasing at Wayside, said during a March 2012 Planning Board meeting that the company wanted to make some changes. They petitioned to change the alignment of parts of the parking lot. They also changed the name from "Wayside Commons" to Wayside.

There were also plans for a Bonefish Grille to go into the current Ginger Pad location. It appears nothing has been done for that change. Burlington Patch will look into it and provide an update.
