Wayland Mom Dreams Up Creative Cakes by Moonlight

From cakes to cookies to fondant toppers, one Wayland mom has turned her kitchen into the headquarters for baked goods fantasies.

Like any parent, Nicole Spiewak wants to be able to provide memorable and special childhoods for her son and daughter.

Unlike most parents, however, Spiewak's desire extends all the way to the very best, most creative birthday cakes any child could imagine.

"I really wanted to be able to give them whatever they wanted," Spiewak said, explaining that her own mother would ask what cake her children wanted and then create elaborate cakes showcasing any number of characters, items or themes.

So Spiewak found herself scouring the Internet for instructions, videos and ideas on her quest to bring her kids the their fantasy birthday cakes. And about 18 months ago, all that research and experience evolved into Frosted Moon Confections, Spiewak's baking business that she conducts from her Wayland kitchen.

But remember, she has two children at home, so baking in her residential kitchen is pretty much out of the question during their waking hours. Enter the "moon" in Frosted Moon Confections. Spiewak does almost all of her baking and decorating by moonlight when the rest of her family is sleeping.

And during those late night hours, Spiewak has sculpted everything from superheroes to caricatures of customers to beach-themed cakes complete with coral and sandcastles. And she does her best work in marshmallow fondant, a recipe she spent time perfecting so that it's both her best medium for cake art and tasty for her customers.

"In addition to me wanting things to be beautiful, I'm also really concerned with how things taste," Spiewak said. She knows that people often come to her having tasted less-than-appetizing fondant in the past, so she went out of her way to create a fondant that tastes as good as it looks.

And when she says her cakes taste good, she isn't just saying that as the vested business owner. In fact, Spiewak has an allergy that prevents her from eating her own confections. How does she know her baked goods are that good? Because her customers tell her they are... and they come back for more.

Spiewak primarily does kids' birthday cakes (among others, she has a three-tier rainbow cake and a race car cake on her schedule right now), but she also likes to sculpt cakes for adults, which allows her to explore more elegant and intricate designs.

"You don't think cake is that important, but people have these amazing stories about how a cake made them smile," Spiewak said. "Now I get to make other people smile.

"I love, love, love seeing people's reactions to my cakes."
