Chen Chow to Donate December Proceeds from Celebrity Sushi Program to CATCH Foundation

announced that the Detroit Lions’ Nate Burleson has signed on as December’s featured celebrity for its Celebrity Sushi Program.

, Chen Chow partners with a local, regional or national figure each month to feature a signature sushi roll in support of their charity of choice. Throughout the month of December, a portion of the proceeds from the sale of each specialty roll will be donated to Burleson’s CATCH Foundation.
 
“It’s great to see local businesses like Chen Chow working to find creative ways to give back to their communities and it just so happens that I love sushi, so it seemed like a perfect fit for the CATCH Foundation,” Burleson said.
 
Executive chef Benjamin Meyer worked with Burleson to craft a roll inspired by his favorite flavors. Meyer created the eight piece maki roll made with tempura salmon and English cucumber. BBQ eel (unagi) is draped over the top of the roll with a blackberry and huckleberry coulis.  The roll is finished with pickled jalapeños and fresh berries.

"Nate has a fondness for both salmon and eel, so we used that as a basis but with a bit of a twist," said Meyer. "In traditional Korean sauces, blackberries are often used with eel but we really wanted to draw on Nate's Pacific Northwestern roots, so we added a touch of huckleberry. The pickled jalapeños provide a bit of heat to wake the roll up, providing an East meets West, or in this case, West meets East feel," he said.

The Celebrity Sushi Program is the brainchild of Meyer and Chen Chow’s general manager, Tracy Wilson. The two felt it was important to recognize and advance the work of nonprofits, like Burleson’s CATCH Foundation, that are dedicated to making an impact in the community. In November, the restaurant sold more than 175 Rhonda Walker Rolls and will make a sizable donation to the Rhonda Walker Foundation at the end of the month.

“The celebrity sushi program directly engages patrons in the giving process and affords clients an opportunity to work with us to make a contribution,” said Tracy Wilson, general manager at Chen Chow.

The #13 will be available beginning Dec. 1 and will remain on the menu for the duration of the month. Burleson will be on hand to officially debut the roll on Dec. 2 at Chen Chow’s First Friday’s happy hour event.
