Woodbury Mexican Restaurant Earns Spot On Cinco De Mayo Roundup

WOODBURY, MN — Residents in the Woodbury area who want to celebrate Cinco de Mayo with an authentic Mexican meal should check out Machete Cocina Mexicana, according to Star Tribune food writers.

Machete Cocina Mexicana’s namesake “machete” quesadilla is a “massive dish” that’s basically the size and length of an actual machete, but fatter,” the Star Tribune’s Joy Summers and Sharyn Jackson wrote in their article titled “Celebrate Cinco de Mayo with your favorite authentic Mexican food at 22 Twin Cities restaurants.”

The Woodbury restaurant’s menu says its signature quesadilla is made with a 21-inch handmade corn tortilla that can be filled with up to three meat and vegetable options for $18.99.

“Go full-bore and order three meats to get the full — and we mean full — experience,” Summers and Jackson wrote.
