New Sandwich Shop Officially Opens In East Brunswick

This is the first location for Galaxy Pile High Sandwiches.

EAST BRUNSWICK, NJ – Galaxy Pile High Sandwiches officially opened in East Brunswick on Tuesday.

The business celebrated an official ribbon-cutting ceremony at the Brunswick Square Mall with Mayor Brad Cohen, Council President Kevin McEvoy, and Economic Development Officer Rob Zuckerman in attendance.

This is entrepreneur Lisa Richardson’s first restaurant. A native of Newark, Richardson was looking for good soul food in the area when she hit upon the idea of the sandwich shop.

"I'd get upset about not finding food that reminded me of my childhood, nearby. I'd drive miles just to get food that reminded me of home," remarked Richardson. "One day while walking in this mall, my husband said - Why don't you do something about it?"

Mayor Brad Cohen officially welcomed Richardson to East Brunswick.

“New businesses like yours are an important part of building the East Brunswick brand. We're really happy to have you as part of our business community! And we wish you many, years of success," Cohen said.

He hoped Richardson’s sandwich shop would be part of the East Brunswick Restaurant Week next year.

As the name suggests, Galaxy Pile High Sandwiches make big sandwiches that are great for sharing with family and friends.

Their menu includes pastrami, corn beef, roast beef, honey turkey, rotisserie chick and vegetarian. The menu also includes salads, side orders, drinks and more.
