New Mediterranean Kitchen Coming To Metuchen, Downtown Alliance Says

METUCHEN, NJ — Metuchen-area fans of Mediterranean fare will have to wait just a bit longer for a new restaurant in the borough, officials said.

Hummus Republic, a "modern Mediterranean kitchen,” is set to open at 339 Lake Avenue, per the Metuchen Downtown Alliance.“Hummus Republic will be coming to Metuchen,” the Metuchen Downtown Alliance said in a statement this week.

“They will bring their modern take on Mediterranean food to our borough, and we couldn't be happier. They are under construction now but should be opening soon.”

The largely plant-based, fast-casual restaurant lets people customize their meals. First, pick a wrap, pita or bowl.

Then choose from different bases, including organic Mediterranean couscous, kale and warm garbanzo beans. Then choose a hummus, a protein and add toppings.

Hummus Republic specializes in "healthier, faster, fresher, lighter and tastier customizable bowls, baguette and pitas," its website says. "Our food is always made fresh and served quickly using organic, sustainable, and locally grown ingredients whenever possible.
