MORRISTOWN, NJ — The wait is almost over: A celebrated pastry chef is opening a brand-new artisan bakery in downtown Morristown, with doors scheduled to open this summer.

The family-owned Kirshenbaum Baking Co. began as an online cookie company to bring in money during the pandemic, and soon developed into a full-service bakery with a flagship site in Westfield.

KBC is set to open its second location to Morristown this summer, with plans to open in mid-August in one of the retail spaces of the Schuyler Lofts complex at 22 Schuyler Place.

At this new location, the bakery will serve its distinctive cookies as well as pies, cakes, pastries, hearth-baked breads, and artisan sandwiches. There will also be a variety of beverages available at their coffee bar.

The bakery-cafe is owned by executive chef Uyen Kirshenbaum and her restaurateur husband Jeff, for whom Uyen created the dairy-free and flourless "Jeff’s Cookie" at the beginning of their restaurant journey when the family still lived in California.

Uyen was born in Vietnam and raised in California, before moving to France to pursue her passions and enrolling in the Lenôtre Culinary Arts School. While working in Las Vegas, she made history as the first female pastry chef for the Michelin-starred Restaurant Guy Savoy.

Jeff, a Fanwood native, worked on Wall Street before moving to Los Angeles to enter the restaurant industry. They began selling cookies online from their California home during the pandemic before deciding to move to the East Coast.

Kirshenbaum Baking Co. said their menu items can be pre-ordered for pickup or delivery, and customers can sit down to eat in the cafe. The 1,300-foot space can seat 25 people, and KBC will also offer catering for special events.

The bakery also offers some dairy and gluten free cookie options. Some of the featured items include salted chocolate chip cookies, Jeff's Double Chocolate cookie recipe, almond croissants, seasonal muffins, and their popular cakes — sold whole or by the slice.
