Record-Breaking Mexican Eatery Is Coming To Parsippany
The authentic, yet contemporary restaurant and bar once held the record for the largest tequila selection in the world.
PARSIPPANY, NJ — Those hungry for some award-winning, authentic Mexican cuisine don’t have to wait much longer, because Meximodo is officially opening a new location right here in Parsippany.
The traditional Mexican eatery’s second location will be in the District 15Fifteen strip, joining several other new retail shops and restaurants.
Meximodo originally opened up in Metuchen, Middlesex County, in November of 2023, where it made a name for itself with authentic cuisine and an extensive bar menu.

Owner Saurabh Abrol, a successful restaurateur in the New Jersey area, takes pride in proper, authentic food, so much so that he took his staff to Mexico City for inspiration.
“(Staff) dined at as many different restaurants as they could to really get a taste of what authentic Mexican food and drink has to offer, from renowned restaurants to the smaller mom-and-pop family restaurants,” a statement read. “Energized and inspired by everything they learned, the Meximodo team flew back North with a deeper understanding of the vibrant food and culture.”

The food menu offers traditional dishes like Pollo con Mole and Sopa de Tortilla, as well as modern twists on Mexican cuisine like the Chipotle Alfredo Rigatoni and the Mexi Smash Burger.
Of course, in the true spirit of Mexican culture, the restaurant has a plethora of tequila and drink options.
In fact, the array of tequilas is so huge, it once held the Guinness World Record of the largest tequila selection in the world.
With over 1,000 tequilas available, the bar offers a variety of margaritas and cocktails, as well as beer and wine options.
“Since Meximodo aims to have the biggest tequila selection in the world, Master Mixologist Carlos Ruiz led the charge through a tour of Tequila, Mexico,” a statement read. “The team explored everything from agave fields to the tequila creation process, learning the ins and outs of this staple Mexican spirit.”
Some specialty cocktails include the Cantarito, a tequila-based, paloma-like drink, and the Café Martini, an espresso martini with a Mexican twist. The bar also offers non-alcoholic mocktails.
According to Meximodo representatives, the contemporary joint is set to open sometime in 2026.
