Mysterious Bergen County Restaurant Named One Of 3 Best In U.S.

BERGEN COUNTY, NJ — This "sushi speakeasy" is so secretive, you can't have their address until you make a reservation. But if that's too mysterious for you, there are two other relatively new spots in North Jersey that specialize in a timed omikase sushi experience.
USA Today released a new ranking of the best restaurants in the U.S. last week. The list included only three spots in New Jersey: One in Paterson, one in Old Bridge, and one in Ridgefield, in Bergen County.
For the Ridgefield restaurant, Sushi By Sea, the article says, "Address provided upon reservation."

The eatery describes itself as "Secret Sushi." And they give their address as "123 YOUWISHYOUKNEW, Ridgefield, New Jersey."
USA Today says, "A sushi speakeasy lives in Ridgefield, serving up 17 courses of sushi in a cozy 12-seat dining room to guests who can find a referral or invite. The global sushi experience is led by an anonymous sushi chef."

The story praises the range of possibilities, from Korean fluke to Spanish akami.
But What Is Omikase, And Who Else Has It?
Omikase is growing in popularity. It's a "timed sushi experience" in which a chef creates and hand-delivers sushi to guests at regular intervals, usually while they're seated at a cozy bar.
If you want to try a less secretive omikase experience, two others have cropped up in North Jersey recently.
The new Maru Sushi in Ridgewood offers limited seating for omikase.
And the intimate new Sushi by Bou at the W Hotel in Hoboken is an omikase bar.
