BED-STUY, NY — A Bed-Stuy native is set to finally open a new vegetarian cafe long delayed by the pandemic.

Che is a new vegetarian cafe from Kai Avent-deLeon the founder of popular combination fashion boutique/cafe Sincerely, Tommy and is gearing up to open in October, according to Brownstoner.

Avent-deLeon first planned to open Che — named after her son — in 2019 as an offshoot of Sincerely, Tommy, with a fashionable hostel above on the top two floors of the building, according to the local news site.

The Malcom X Boulevard building, about a mile from Sincerly, Tommy's Tompkins Avenue location, is owned by Avent-deLeon's grandmother, the site notes.

According to a preview Avent-deLeon gave to Vogue magazine in August 2019, the concept behind Che was to incorporate her Caribbean roots alongside West African cuisine in a minimalistic space inspired by Avent-deLeon's travels.

“I really wanted this to feel like my trips to Mexico,” Avent-deLeon told Vogue. “I just really liked how they literally incorporate everything from the land into any space they have.”

But like so many well-made plans of 2019, Che soon found itself repeatedly derailed by the crushing global pandemic

Little remains known about the new Bed-Stuy eatery, aside from that it will serve vegetarian small plates, mocktails, wine and coffee, according to its Instagram account.

While Che's website lists a menu, references to a Fall 2019 opening make it unclear if the information has been updated for this new opening four years later.

According to state records, Avent-deLeon has yet to file paperwork for a liquor license at Che.

Back in August, Che held a weekend pop-up with Bagel Bunny, according to the cafe's instagram account.
