Pastry Chef And Barista Couple Open New Cafe In Bed-Stuy

Passionfruit Coffee features a marriage of talent from a James Beard Award winning pastry shop as well as a top-level barista.

BED-STUY, BROOKLYN — A new cafe in Bed-Stuy features a marriage of fresh coffee and house-baked pastries brewed and baked by a talented married couple.

Passionfruit Coffee, at 733 Madsion St. near Patchen Avenue, opened last week, and owners and couple Taylor and Chole Siok are combining their passions to bring caffeine and fresh baked goods to Bed-Stuy.

And that passion is backed up with skills.

Taylor began his journey in the world of flakes and butter after graduating from the Culinary Institute of America in 2013, and worked at the Upper East Side's acclaimed Daniel, according to the cafe's website.

He then opened a bakery out in Washington state, was pastry chef and director of operations at an acclaimed Spokane, Iowa restaurant and moved back east recently to work for friend and James Beard Award winning pasty chef Ghaya Oliveria — also formerly of Daniel's— at her Long Island Pastry Shop, Ghaya, while he worked on opening Passionfruit Coffee.

Chloe has been a barista — and nearly every other service position — for the last 10 years in New York City and Washington. Most recently, she worked as a bartender at Manhattan cocktail hotspot, Please Don’t Tell.

Their menu includes a selection of espresso drinks, brewed with beans from Doma Coffee, as well as tea.

Pastries currently include flavors of various pound cakes, like passionfruit, blueberry lemon and hazelnut caramel coffee cafe, as well as made-to-order super-fresh madeleines.

And as "service-industry lifers," their website reads, a goal of Passionfruit Coffee was to be a leader of "ethical business practices."

One of those practices is that gratuity is included in their prices. So no need to tip, unless you really want to.
