Anago Hako Sushi Roll from Hibino

Cold shredded egg omelet topped this masterpiece.

Sushi lovers rejoice: at Hibino, there are options beyond spicy tuna. (Not that there's anything wrong with spicy tuna; in fact, Hibino does that too, and really well, with a dollop of spicy sauce on top instead of mixed in.)

The star of the meal was the Anago Hako Sushi roll, a delightful and fresh roll that felt cold inside my mouth, which was very unexpected. A delicate mix of sea eel, kampyĹŤ, (dried shavings of calabash, a type of gourd) and the herb shiso, the roll nearly had an effervescent affect.

And it was topped with shredded omelette, which is something i'd never seen before. I'm not an expert on Japanese cuisine, but i've eaten sushi in many different restaurants and cities, and never experienced the delicious coldness of shredded omelette on a roll.
