Blue Parrot Chef Rico Martinez's Presenting Awesome "Lobster Fajitas"

If you love Lobster Rolls you will really love this entree, a Rico Martinez creation that is priced less than most Lobster Rolls.

If you love Lobster Rolls you have to stop by the Blue Parrot and sample Chef Rico Martinez's "Lobster Fajitas," a prize on the 2022 menu this season. The Blue Parrot has been a favorite to all east end Tex-Mex cuisine lovers since the mid 1980's. It has continued to consistently shine year after year.

The hugest part of the reason is that Chef Rico Martinez, perhaps the, "Best Tex-Mex Chef in the Hamptons," has been in the kitchen supervising for almost three decades. That's consistency! The menu has the usual Tex-Mex barritos and enchalados not to mention a huge selection of tacos. They serve a burger and have many vegitarian options, an important feature in these changing times.

The Blue Parrot has a colorful history. In the 1990's under owner Lee Bieler, it was a surfer's pradise with surf movies using a projector, and all sorts of fun events that was typical of the pre-smart phone world. Billy Murray, Woody Harrelson, Cherly Tiegs, Jimmy Buffet, and so many others spent the best parts of their youthful summers, literally partying to the early hours.

Roland Eisenberg invented their famous margharita mix that was so refreshinly tasty that Business icon Ronald Perelman would request the mix for his Jet, when leaving the east end. Now he and Jon Bon Jovi and some other expert businessman since around 2009, actually own the place!

On YouTube there is a video of Jon Bon Jovi playing for very surprised 4th of July customers at the Parrot.

Just in the last few years it has evolved into yet a hot spot for a new generation.

Tucked away in a corner of the East Hampton Village parking lot, behind Ralph Lauren's shop it may not be easily found, but once you discover its ambiance you do go back. A few years back Chef Rico Martinez married Caimen Marin Bernal right at the Blue Parrott with local judge and patron Judge Steven Tekulsky presiding over the ceremony. It's just that kind of warm friendly place.
