Springs Tavern Reopens With New Name, Owners In July
The eatery is set to reopen with a focus on affordable prices and a welcoming atmosphere.

EAST HAMPTON, NY — The Springs Tavern is set to reopen for the season on July 1— with a new name, new owners, and a new chapter set to unfold.
Now called the Springs Tavern and Grill, the business is helmed by Alex Rossi, who lives in Springs with his family and literally grew up on the New York City restaurant canvas. His father, Rubrio Rossi, owned the acclaimed Parioli Romanissimo on the Upper East Side.
His vision for the longtime destination is to create a year-round eatery with "affordable prices and a welcoming atmosphere. Look for a revamped ambience in the completely renovated interior and a beachy and inviting upgraded outdoor dining area and lounge," the release said.

In addition, Rossi has partnered with Raul Rodas, a veteran professional of such East End restaurants as Indian Wells Tavern, 1770 House and Coche Comedor; Rodas will manage the day-to-day operations. Chef Fabian Rodas will helm the establishment.
The menu will feature starters, salads, mains and Tavern favorites, along with a grilled selection where diners can pick a protein a side to enjoy. Springs Tavern and Grill will also have some classic Parioli dishes for diners on the menu.

A selection of menu items, subject to change, will include starters such as crispy calamari, blistered Shishito peppers, burrata and grilled endive, balsam farms beets and arugula and a Cobb salad, with sides such as a NY strip, salmon, tuna and prawns available.
Tavern favorites such as onion soup au gratin and the Tavern burger, as well as fish and chips, are also back.
Main dishes include pan-seared salmon, Rubrio Rosi Pasta alla Bolognese, and chicken Milanese.
