New York's Hottest Trend is... Meat Cappuccino?
At the new Brodo Broth shop in the West Village, warm up with some frothy broth in a cup, by far the most talked-about food trend in NYC.
WEST VILLAGE, NY — Would you like some meat in your coffee? At the new West Village location of Brodo Broth Shop, you can get a frothy, buttery, fatty, meaty bone broth in a cup. The omnivore's cappuccino, if you will.
Chef Marco Canora of the East Village restaurant Hearth opened a side window last year that served bone broth, and it was such a hit that his broths are popping up what seems like everywhere. Canora opened a seasonal Bryant Park booth this winter and made a deal with the maternity ward to serve broth to the expectant mothers at NYU Langone's Medical Center, Grub Street reported.
But the new Brodo Broth Shop on 495 Hudson St. between Christopher and Grove streets is really where this new concept has the room to break out of its shell. The new storefront features bone broths that are spiked with what Canora calls "quality fats," that are frothed like the cream in a latte. There's grass-fed ghee, Moroccan spiced butter, and organic coconut oil, for a start.

There are also a variety of new spices and flavors you can add to your broth, like turmeric, seaweed, ginger juice, shiitake tea, and dozens of other eccentric ingredients.
The person who fixes your concoction will recommend certain combinations, as Canora told Grub Street he wants the restaurant to feel like an "apothecary." The menu has pre-set options of combinations for you to choose, if you're completely lost.
