New Prospect Heights Bakery Opened By Olmsted, Maison Yaki Team
The cafe, which opened on Bergen Street, features an Austrian-style from Olmsted's pastry chef.

PROSPECT HEIGHTS, BROOKLYN — A new bakery in Prospect Heights will have some familiar faces in the kitchen.
Evi's Bäckerei, which opened on Bergen Street over the weekend, is the latest project for the team behind popular neighborhood spots Olmsted and Maison Yaki.
It will be run by the eateries' owner Greg Baxtrom and their longtime pastry chef, Alex Grunert, who named the new cafe after his mother Evelyn.

Neighbors familiar with the critically-acclaimed menus at Olmsted and Maison Yaki, which are found down the block from Evi's, will recognize some favorites at the new cafe, according to the pair.
"[Grunert's] baked goods have acquired a cult-following — from Olmsted’s Austrian Christmas Stollen, to Maison Yaki’s Matcha Profiteroles, to the daily baguettes and seasonal breads at Olmsted’s Trading Post that often drew lines around the block during the pandemic," the owners wrote in a release.

At Evi's customers will find breakfast and lunch menus with fresh daily breads, pastries, cakes, soups, sandwiches and coffee along with signatures like the Austrian Christmas Stollen, owners said.
Other offerings with Grunert's Austrian twist include a play on Sachertorte cake, Krapfen Austrian donuts and Eggnog Bundt Cake based on his grandmother's recipe. The holiday offerings, which also include Christmas cookies and the stollen, are available for a limited time.
Opening the cafe was also a family affair for Baxtrom, whose father collaborated on designing and building out the space. Mike Baxtrom also built Olmsted and Maison Yaki.
In the New Year, Greg plans to open his own homage to his mother with a new neighborhood restaurant next to Evi's that will be called Patti Ann's, according to the owners.
Evi’s is open Wednesday to Sunday from 7 a.m. to 4 p.m., with extended hours in the coming weeks.
