Meet The Owner Of The New Sayville Restaurant

The Bait and Tackle is planning to open this month on N. Main Street. Patch spoke with the owner to learn more about the new business.

SAYVILLE, NY — As the new Sayville Bait and Tackle is set to open this month, Patch spoke to the owner to learn more about the new business.

Drew Dvorkin will be opening the restaurant at the site of the former Irish Exit on 220 N. Main Street.

In addition to the new eatery, Dvorkin owns various other restaurants including T.J. Finley’s in Bay Shore, The Penny Pub in Bay Shore and Local Burger in Bay Shore, Patchogue, and Southampton.

However, now he is excited to open in Sayville.

"I’ve been passing by this location for years and always saw it as a diamond in the rough," he told Patch. "It just needed an injection of passion and a concept that embraces the neighborhood. Sayville is a seaborne town with a strong connection to all things nautical."

The opening of the new business was unfortunately delayed for about a year due to the coronavirus pandemic.

"Sayville Bait & Tackle is a South Shore restaurant and bar," he said. "We want to bring the 'fun' back to an industry that has been decimated by the pandemic," he said. "Bait & Tackle will be lively, dynamic, and inviting."

Once it opens, guests can expect a 50-foot bar, a lobster roll menu, a sipping rum menu, regional craft beers, and a robust selection of tequila and whiskey. In addition, Dvorkin said there will be a few surprises that will be unveiled soon.

An exact opening date has not yet been announced, however, Dvorkin is aiming to open this month.
