New York’s First Graze Craze Charcuterie Store Opens in Clay
Franchisees are thrilled to put their creativity to work curating graze-style boards and boxes perfect for celebrating special moments

CLAY, NY (Jan. 2025) – The town of Clay is the first in New York to boast a Graze Craze®, the fast-growing concept that has elevated graze-style dining with its artfully designed charcuterie spreads. A new 1,200-square-foot store has opened at 4599 State Route 31 Suite 5 in Clay Marketplace. It’s operated by franchise owners Christine Rawda and Colleen Rajkowski, friends who are eager to create unforgettable grazing packages that help guests celebrate everything.
“We’re excited to introduce Graze Craze to Clay,” said Rawda whose business experience most recently includes being CIO of a local retail organization. “Charcuterie is growing in popularity and people enjoy having boards made to their specific tastes. Graze Craze’s custom, made-to-order boards make it easy to create a unique presentation, and we’re excited to have the opportunity to be involved in our customers’ celebrations.”

The franchisees will lead a team of expert Grazologists™ who curate charcuterie boards made from a variety of high-quality specialty ingredients, like premium meats and cheeses, fresh fruits, crisp vegetables and more, accompanied by house-made sauces, dips and jams. Each grazing spread features a complementary blend of flavors, colors and textures that produce an eye-catching work of edible art that can be both admired and enjoyed.

- The Gone Grazey – A blend of cured meats, premium cheeses, crackers, fresh produce, nuts and more.
- The Vegegrazian – A vibrant medley of fruits and vegetables.
- Sweet & Grazey – An abundance of desserts, like chocolates and baked goods paired with sweet dips.
- The Brunch Board – A selection of breakfast meats, fresh fruits, eggs, pastries and more to complement morning meetings and events.
The store also offers seasonal options, like the Game Day Board complete with a variety of meats, cheeses, breads and spreads that are ideal for watch parties and tailgating.
The charcuterie offerings are available in different size options, from Char-Cutie-Cups and Picnic Boxes for nibbling to sharing-size boards with enough fresh food to feed a party. The food displays are ideal for family gatherings, large events and more, and they make for memorable corporate and personal gifts that always impress.
Christine and Colleen were born and raised in Liverpool, New York. “We both come from big, sports-oriented families,” said Rajkowski, who formerly worked as an executive vice president for a local retail company. “Our families love to celebrate life with food and gatherings, and we want to bring that kind of joy to our customers at Graze Craze.”
Clay Marketplace, where Graze Craze Clay is located, is a brand-new multi-use development that includes the David’s Landing apartment complex.
