Blue Hill At Stone Barns To Reopen With A New Twist

Most of the tables at the famed Hudson Valley restaurant are already sold out and on a waiting list for October and beyond.

TARRYTOWN, NY — Blue Hill at Stone Barns will reopen to diners next month, but the Michelin-starred restaurant will be doing things a little differently after its pandemic-related hiatus.

Before ever setting foot in the dining room, guests will have the chance for a behind the scenes look at dinner. Visitors can choose to tour the agricultural spaces and pastures on the property with a Stone Barns farmer and a Blue Hill cook before dinner. Alternatively, diners can choose to visit the Innovation Lab at Stone Barns to learn more about the connection between healthy soil and delicious food through the on-site lab which studies and tests new and traditional milling, baking, butchery, preservation and ecology techniques.

The new programs were inspired in part by a series of guest chef dinners Blue Hill hosted while regular dinner service was suspended due to the coronavirus.

Both of the pre-dinner excursions are being offered for a nominal additional fee that benefits the Stone Barns Center.

Prepaid reservations for dinner and a farm tour start at $378 per person. Tickets for an exploration of the Innovation Lab and dinner start at $328 per person. Prepaid dinner only reservations start at $298 per person. Reservations are sold out through the end of October, but a waitlist is available.

All guests 12 years of age and older are required to be vaccinated. Proof of having received a COVID-19 vaccination may be required. Proof can include a vaccination card, a picture of the card on your phone or a state-provided digital record. All Blue Hill and Stone Barns staff adhere to the same guidelines, according to the management.
