AMBLER, PA — A new Mexican restaurant has opened its doors in Ambler.

La Baja, located on 9 N. Main Street, is a creation of James Beard Award finalist chef Dionicio Jiménez.

"We’ll take you on a culinary experience throughout the Mexican borders and share the stories behind the dishes," the owners, who also run Cantina La Martina in Philadelphia, shared. "Our opening menu will reflect Mediterranean and Asian flavors."

The focus will be on "cocina de frontera" or "frontier kitchen": dishes that embody the multicultural borderlands of Baja California in Mexico. The area saw significant immigration from China and Japan in the 1920s, and it is also influenced by the Mediterranean, due to its very similar weather and soil.

The weekend special was steamed halibut with chorizo and clams in a white wine and fennel sauce.
