Flakely Gluten Free Bakery Opening New Bryn Mawr Location

BRYN MAWR, PA — A popular gluten-free bakery is moving from Manayunk to Bryn Mawr soon.

Flakely Gluten Free, owned by pastry chef Lila Colello, is moving its operations from Manayunk to a new storefront bakery at 1007 W. Lancaster Ave. in Bryn Mawr in early February.

After four years of operating from the Manayunk industrial production kitchen with a take-out window, Flakely is transitioning to a traditional brick-and-mortar establishment. The new location will feature a walk-in bakery offering freshly baked, ready-to-eat items. It will also continue to provide frozen breads and pastries through an ATM.

The new Bryn Mawr space is nearly 1,400 square feet, up from the current 800 square-foot location. About 300 square feet will be dedicated to retail walk-in space, moving beyond a simple takeout window.

The bakery plans to operate Tuesday through Saturday from 9 a.m. to 4 p.m.

Fresh croissants will be available at the new location, a key offering for Colello. She noted that gluten-free croissants are highly sought after and difficult to find. Colello plans to host gluten-free baking collaborations, classes, and pop-up dinners in the new space once it opens.

Colello launched Flakely in 2021 after being diagnosed with celiac in 2010. She had previously trained at the French Culinary Institute in New York City and worked for culinary professionals including Wolfgang Puck, Eric Ripert, and Stephen Starr.

Flakely specializes in gluten-free croissants, French-style breads, bagels, and various pastries. The bakery bakes to order five days a week, freezing goods immediately for customer freshness.

The bakery was recently recognized as a top-five gluten-free bakery in America by USA Today.
