Craft Tavern Bringing 'Bold New Concept' To Historic Bucks Co. Landmark Inn

DUBLIN, PA — After building an extremely loyal following and some national acclaim with beloved Craft Barbecue Co. (formerly Holy Que in Lahaska), owner Tom Peters is back from the BBQ ashes — this time, with a bold new concept that blends high-level tavern fare, handcrafted cocktails, with a hint of Prohibition-era mystery.

Introducing Craft Tavern — a modern speakeasy-style tavern opening its doors in mid-late July at the former home of The Dublin Inn.

While Craft Barbecue Co. was a massive hit, Peters is returning to his roots.

“Barbecue had an incredible run — and we’re proud of everything we achieved — but the truth is, my wheelhouse is this,” he says. “Craft Tavern brings everything I’ve learned over the last 30 years full circle: high-level food, exceptional drinks, and a deep focus on hospitality."

Peters adds, “Craft Tavern is a love letter to everyone who supported Craft Barbecue. And to those ready for something fresh — it’s something elevated yet very welcoming”

Housed in a building rich with local history, the new space pays homage to its roots while reimagining what a tavern can be: scratch-made dishes, thoughtful service, and a warm, moody atmosphere designed for conversation and connection.

The grand opening celebration is yet to be announced but slated for mid/late July.

Guests can expect a diverse menu featuring signature dishes, craft cocktails, and a few surprises for early guests. Locals can expect an experience that feels both nostalgic and unexpected — a place where quality meets charm, and where every visit feels like a bit of a secret.
