New Brunch, Café Concept Coming To Vacant McDonald’s In Old Town Fairfax
Offering a menu of handcrafted pastries and sandwiches, Layered aims to be a go-to spot for great coffee and desserts in Old Town Fairfax.

FAIRFAX CITY, VA — Layered, a new brunch and café concept from the owners of Chateau de Chantilly, is expected to open around July in the vacant McDonald’s building in Courthouse Plaza, according to Fairfax City Economic Development.
The project is a collaborative effort between business owners Combined Properties and the FCED, using the city’s Façade and Interior Improvement Grant program. This is the same program that the owners of DTL Sports Center used in 2024 to open its indoor pickleball facility in the same shopping center.
“We are thrilled to welcome Layered, a new, walkable third place and a destination business, to Old Town Fairfax City, Layered,” said Christopher Bruno, FCED’s CEO and director. “Was able to take advantage of another keystone program of FCED, and we’re proud to demonstrate once again how local leadership and targeted investment can directly support small- and independent-business growth.”

Once Layered opens, city residents will be able to sip specialty coffee and order from a menu of handcrafted pastries, freshly baked desserts, cakes, and artisan sandwiches, all of which are designed by a Michelin-trained chef. There will also be ample indoor and outdoor seating.

“It's exciting to welcome a new café in our downtown so close to the library,” said Fairfax City Mayor Catherine Read. “Layered. will provide a gathering place for students, families, and visitors in a walkable location. Their very name reflects what is happening in our city as new businesses choose to locate here, shaping the character of our downtown with their unique offerings. I’m delighted to see a long vacant building reimagined and brought back to life.”
Choi, co-owner of Layered, said he was thankful for the city’s support in helping to make Layered a reality.
“Our vision is for this to be a place where people come together — whether for a casual coffee catch-up, a family treat, or simply to enjoy something special. We hope to become Fairfax City’s go-to spot for great coffee and desserts.”
