Founded in 2016, SeoulSpice began as an idea from Eric Shin, principal percussionist of the

National Symphony Orchestra. Growing up in his mother’s Korean restaurant, Eric fell in love
with the bold flavors of Korean food and its power to bring people together, the company said.

“We are proud to be part of the Falls Church community,” Shin said in a statement. “With such a
dynamic mix of places to live, work, and play, we’re excited to bring a taste of Korea’s delicious
food and warm hospitality to the neighborhood.”

SeoulSpice’s expansion comes at a time when Korean culture is booming across the U.S., with
K-pop, K-dramas, and K-beauty fueling a nationwide appetite for Korean cuisine. According to
Chicago-based market research firm Circana, Korean restaurant growth in the U.S. surged 10%
year-over-year in 2024, across both full-service and quick-service formats.
