Eggs Pose Contamination Risk At Fredericksburg Restaurant

FREDERICKSBURG, VA — Rappahannock Area Health District inspectors reported finding health code violations at five of the 20 Fredericksburg food establishments they visited May 8-16.

During a May 15 inspection, an inspector reported seeing hard shell eggs stored over ready-to-eat produce in the walk-in cooler. The eggs were moved to the bottom shelf.

Restaurants are required to separate raw animal foods during storage, preparation, holding, and display from raw ready-to-eat food, including other raw animal food such as fish for sushi or molluscan shellfish other raw ready-to-eat food such as fruits and vegetables.
