60-Degree Unrefrigerated Cheese: Manassas Restaurant Inspections

MANASSAS, VA — In the first days of 2025, some restaurants in the Manassas area recorded violations during recent health department inspections.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Manassas and western Prince William County area so far in January, according to the Prince William Health District. One notable result was inspections at two McDonald's locations showing 60-degree American cheese and employees handling fries with winter gloves.

The hot water temperatures of all plumbing fixtures which require a specific hot water temperature were in compliance.

• The yellow American cheese was not refrigerated, recorded temperature 60°F. No written procedures for using time as public health control available.
• There is not Time as a Public Health Control (American Cheese) written procedure available.
• The female and male toilet room handwashing sink was less than 100°F. Recorded temperatures =50°F.
• Observed raw unpasteurized shell eggs store next to open containers of pasteurized liquid eggs in the food preparation reach in drawers.
• Observed food employee wearing winter gloves while serving French fries at the drive through window.
• Food employee did not wash, rinse and sanitized the food thermometer.
• This food establishment is using time as public health control for American yellow cheese. However, there are not written procedures available to the Prince William Health District.
• Observed food employees not wearing hair restraints exposing food, and clean equipment, utensils, and linens; and unwrapped single-service and single-use articles.
• The warewashing hot air dryer is rusty.
• The mop sinks (2) faucet vacuum breakers are under pressure (attached Y connection).
• The dumpsters are opened and overflowed, observed cardboard on the floor around the duster.
• The chemicals dry storage doorknob missing.

• Food employee indicated and demonstrated that the food thermometer was only wiped with a wet sanitized cloth, prior to taking temperatures.
• Improper methods were used to rapid cooling burritos. The burritos were wrapped and placed in the refrigerator before reaching 41°F (recorded temperature 44°F less than 4 hours after wrapping).
• Observed food employees without wearing hair restrains exposing food and clean equipment.
• The electronic hot air dryer at the warewashing station is rusted.
• Observed the mop sinks (2) faucet vacuum breakers are under pressure. There are Y connections with chemical mixers attached.
• The dumpsters lids were opened and overfilled; cardboard observed on the dumpers area floors.

Dunkin Donuts/Baskin Robbins: 7421 Sudley Rd 101 Manassas, VA 20109

• Observed an employee beverage cup stored on the shelves in near the office in the kitchen.
• Observed the water from the hand washing sink in the toilet rooms was measured at a temperature less than 100F.
• Observed the cracked waffle cone case in the ice cream preparation area in the kitchen.
• Observed the fan guards with encrusted dust build up inside the walk-in cooler in the kitchen.
