Vienna Restaurant Inspections: Dead Insects On Trap Over Dishes, Mold-Like Debris
Health inspectors noted dead roaches or insects on a trap, fruit flies, a black substance in the ice machine and more violations in Vienna.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on reports in October around the Town of Vienna. Notable violations included dead roaches or insects and a mold-like substance at Amma Vegetarian Kitchen, a black substance in the ice machine at Cuco's Peruvian and numerous fruit flies at Pizza Vienna.

The certified food manager could not provide a food temperature measuring device. A FOOD THERMOMETER IS NOT ON SITE.

- Observed the lack of an approved backflow prevention device (“Y” breaker) on the mop sink.
- The food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events.
- Observed there is no Certified Food Manager present in the establishment during the entire inspection.
- Observed in-use utensils (2 metal serving spoons) improperly stored in container standing water (77F) on counter at room temperature in between use.
- Observed black debris on the interior surface of ice bins in the kitchen area and not being cleaned as required.
- Observed the absence of no smoking signs or international signs in non-smoking area in the facility.

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: sliced tomatoes in plastic container stored on the top lid of the prep top cooler (outside of the refrigeration unit) with a temperature of 57F at time of inspection.
- Observed 3 metal containers of cooked bacon loosely wrapped in plastic wrap improperly stored on a shelf with several chemical spray bottles.
- Observed restricted, commercial use pesticide (raid spray) present in the facility are applied by the operator who is not a certified pesticide applicator.
- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: 2 drawer undergrill ambient temperature at time of inspection is 49F.

- Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: raw shelled eggs stored above whole RTE tomatoes and strawberries inside Avantico 1 Dr UP refrigerator.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: whole white milk (45F) inside Avantico 1 Dr undercounter refrigerator (front). Observed reach in cooler overfilled with multiple jugs of milk.
- Observed several openings in the ceiling above the fryer in the kitchen.
Call Your Mother Deli: 205 Maple Ave, Vienna, Va 22180

- Observed no heat sensitive test strips or thermometer available to verify heat sanitization step of mechanical warewashing machine.
- Observed the establishment has not posted the permit to operate in a conspicuous location. Not posted at all.
Pizza Vienna: 235 Maple Ave, Vienna, Va 22180

- Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled 'Employee Health Policy.'
- The food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events.
- Observed that paper towels were not provided at the handwashing sink near the 3 compartment sink.
- There is no test kit located in the facility for monitoring the concentration of the chlorine sanitizing solutions at the 3 compartment sink.
- Effective prevention methods are not being used to numerous fruit flies in the back kitchen area.
- The handwashing facility located near the 3 compartment sink is blocked by kitchen equipment, preventing access by employees for easy handwashing.
- There is no Certified Food Manager present at the beginning of the inspection.
- Observed that hand soap was not provided at the handwashing sink located near the 3 compartment sink.
- The following methods used for cooling were not adequate to facilitate proper cooling: open cans of pizza sauce overfilled in big metal pot, cooling overnight (more than 6 hours) inside Supera 1 Dr glass UR with ambient temperature of 56F at time of inspection.
- There is no covered refuse container for the disposal of feminine napkins in the gender neutral restrooms’ stall.
The Virginian: 169 Glyndon St, Vienna, Va 22180

- When tested, the low temperature, chlorine sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine
- solution.
- The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: cut cantaloupe.
- The food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events.
- Observed there was no temperature measuring device located in the following cold holding equipment: Beverage Air 2 Dr flattop reach in refrigerator, True 1 Dr
- UR glass refrigerator, Turbo Air 3 Dr preptop refrigerator, and 2 Dr sliding glass display cooler (customer service area).
- Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises. EHS observed unnecessary items and equipment behind the grease hood across from the dry storage shelf in back kitchen area.
- Observed bag of flour stored directly on the floor in the dry storage area.
- Observed dusty fan is stored directly above clean kitchen equipment and utensils stored in rack on the clean side of the chlorine dish machine and were stored in an manner that exposed the item(s) to contamination.

- Observed a container previously used to store poisonous or toxic materials is being used to store food/ sauces inside of the walk in cooler.
- Observed the food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events.
- Observed there is no Certified Food Manager present at the beginning of the inspection.
- The handwashing facility located in the back kitchen area is blocked by kitchen equipment, preventing access by employees for easy handwashing.
- Observed CFM not present while establishment is operating.
- Unwrapped spoons were stored going in different directions in a box in the front customer service area.
- The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: accumulation of black mold like debris on shelves inside the 2 Dr UP refrigerator in the kicthen.
- Observed in-use utensils improperly stored between use as follows: whisk stored in container of dirty standing water at room temperature on prep counter on the cook line.
- Insect control device (insect glue trap) is located over clean dishes (metal bowls) on shelf near the 3 compartment sink in the kitchen area where dead insects may be impelled or fall.
- Observed dead roaches/ insects on hanging on 2 glue trap hanging on clean dish shelf near the 3 compartment sink were found on the premises.
Big Buns: 142 Branch Rd, Vienna, Va 22180
Last inspection: Oct. 8
- Different types of raw animal foods stored in such a manner that may cause cross contamination as follows: uncooked hamburger patties stored directly above uncooked red snapper filet inside 4 drawer undergrill refrigerator.
- Observed box of vanilla ice cream/ shake mix stored directly on the floor inside the walk in freezer and less than 6 inches off the floor.
Bonaroti Restaurant: 428 Maple Ave, Vienna, Va 22180

- The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F: 2 Dr flattop refrigerator ambient temperature at time of inspection 45F.
- Observed several wet/ soiled wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter in between use.

Red Bird: 282 Cedar Ln, Vienna, Va 22180
Last inspection: Oct. 27
- Observed metal scoop improperly stored in a container of standing water (109F) in steam table on the cookline in between use.
- Insect control device (Ecolab enclosed bug light) is located directly over Kintera 3 Dr preptop refrigerator in the kitchen area where dead insects may be impelled or fall.
- Intake and exhaust air ducts are not being cleaned at a frequency necessary to prevent contamination by dust, dirt, and other materials. Observed grease filters under hood system were noted to have excess black buildup.
