Eateries With Up To 20 Violations: Woodbridge Restaurant Inspections

Prince William County health inspectors found as many as 20 violations during recent inspections, including a visibly unclean ice machine.

WOODBRIDGE, VA — In recent weeks, health inspectors found violations at some restaurants during inspections in the Woodbridge area. One of those places had 20 violations.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Woodbridge and eastern Prince William County area, according to the Prince William Health District. Of note, Chili on Top had 20 violations, such as single-use items exposed to potential contamination and foods cold holding at improper temperatures.

In addition, a Kung Fu Tea location had 18 violations, including a soiled ice machine and no gloves for employee use. Health inspections made suggestions for corrections in the reports.

Violations:

  • Observed the handwashing sink used as storage for juice.
  • Observed the handwashing sink was blocked by big containers of chemical making inaccessible for employees to wash their hands.
  • Observed chemicals such as bleach and golden deck chemicals were stored next to handwashing sink.
  • Observed the following foods stored on the floor in the kitchen: vegetable cooking oil, and boxes of breaded chicken.
  • Observed in-use wiping cloths stored on the counters, on the tops of the prep cooler, the stove, and the prep cooler.
  • Observed the ice scoop stored on the top of the ice machine.
  • Observed cutting boards with scratching and scoring and cannot be effectively cleaned and sanitized.
  • Observed the 3-compartment sink was not set up to wash with soap solution, to rinse, and to sanitize utensils and other dirty equipments in the food establishment.
  • Observed wet mops were stored inside buckets.

  • The person in charge did not provide a Food Protection Manager Certificate.
  • Employees are not informed of their responsibilities to report to the person in charge information about their health and activities as they relate to diseases that are transmitted through food.
  • Observed wet wiping cloths stored on the tops on the contact surfaces such as the top of prep cooler and prep tables.
  • Observed the floor in the kitchen was wet with spilled coffee and needed cleaning.

Chili On Top: 12531 Dilllingham Square Woodbridge, VA 22192

Violations:

  • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
  • Observed an open drinking container (food staff's) stored (on the food prep table) in a manner that may contaminate food, food contact surfaces or utensils; observed an employee's drink container stored above the single service items up front; observed food staff drinking from a disposable bottle of water in kitchen area.
  • The handwashing sink originally located in the front has been removed from the food preparation area.
  • A bowl of Kimchi (w/sauce) was observed to be stored on top of raw cabbage on top of the Delfield 6 drawer refrigerator.
  • Raw meats such as chorizo were observed to be stored over ready to eat (RTE) foods such as shredded cheese and noodles in the Avantco 4 drawer refrigeration unit. Raw shrimp was stored above raw ready to eat foods in the True 2 drawer freezer.
  • The chlorine sanitizing solution dispensed in the Noble stationary low temperature warewashing machine was not at an acceptable concentration. The concentration was measured at 0ppm chlorine.
  • Observed birria beef in Qualite HH #4, at 2:00pm at 80 degrees F. Per CFPM, birria beef was placed in the holding unit at 8:00am.
  • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: shredded cheese, noodles and chorizo in the Avantco 4 drawer refrigerator at 43, 45 and 43 degrees F, respectively. Sauce (creme) for elote was found sitting out at room temperature (70 degrees F), per staff had been out for 1 hour; cheese and chorizo in walk-in cooler at 44 and 42 degrees F, respectively.
  • Spray bottles of chemicals (pink liquid in one container, blue liquid in another) were observed to be unlabeled.
  • Observed chicken egg roll mixture, made earlier today (3 hours ago) cooling in a covered container in the True prep refrigerator, front at 58 degrees F. Pico de Gall, made today, in covered container in walk-in cooler at 50 degrees F.
  • There were no temperature measuring devices (thermometers) located in the following cold or hot holding equipment: Delfield 6 drawer refrigerator; True prep refrigerator (up front) * The thermometer in the True 1 door prep refrigerator (with sauces and sodas only) appears to be in disrepair.
  • Dry parmesan cheese was observed to be stored in an open container, exposed to potential contamination.
  • The wet wiping cloths along the cook line were not properly stored in the sanitizer bucket in between use.
  • Clean equipment (lexan pans) were stored stacked and wet on the clean equipment storage shelf.
  • Bag of soiled linen was observed to be hanging on shelving storing single service items (up front).
  • Take out containers in prep area were stored with the food contact surfaces exposed to potential contamination.
  • Single service items were stored on top of the 2 drawer reach-in freezer, adjacent to the handwashing sink, and exposed to contamination from the splash of waste water; box of single service lids was stored on the floor; boxes of single service items (napkins/lids) were observed to be stored on the self service counter accessible to patrons.
  • Black storage crates being used to store foods within.
  • The following refrigeration units were not holding temperatures of 41 degrees F and below: Avantco 4 drawer refrigerator at 43 degrees F; Bison 2 door prep refrigerator at 42 and the walk-in cooler at 42.
  • The colored cutting boards onsite were observed to be severely scored and no longer easily cleanable.
  • Raw wood shelving/pallet being used under water heater in back.

  • Observed a food employee handling and juicing oranges without gloves or utensils. When asked, no gloves were available in the food establishment.
  • No hand towels were available at handwashing sink up front.
  • Interior of ice machine observed to be unclean with visible soil.
  • There were no ambient air temperature measuring devices in either the ProCore 1 door reach-in refrigerator or in the KinTera 2 door reach-in refrigerator. The thermometer in the glass front refrigerator appeared to be in disrepair.
  • Foods (magic gem boba and pineapple jelly) were observed stored in cabinets up front directly under wastewater lines.
  • Employee handling food was observed to not be wearing a proper hair restraint.
  • Wet wiping cloths were found on counter tops and not properly stored in the sanitizer buckets in between use.
  • Observed deteriorated sponge at 3 compartment sink for use when cleaning food contact equipment.
  • Observed wet wiping cloths being sanitized in the 3 compartment sink with bleach.
  • Spoons used to dispense moist ingredients were stored in container of water at room temperature in between use.
  • Boxes of single service items were observed to be stored on the floor in the back, near shelving.
  • The seal/gasket on the door of the ProCore 1 door reach-in refrigerator is in disrepair and falling off of the door.
  • Cutting boards were observed to be severely scored.
  • Wooden utensil (large spoon-like) being used in kitchen.
  • Observed raw wood shelving in cabinets throughout the front food prep area.
  • Lockers exist in food establishment, but hats and aprons were observed to be stored on shelving with foods in the back. Hat/clothing rack exists above dunnage racks for food/single service storage in the back.
  • Table with chairs observed to be located in kitchen across form 3 compartment sink and adjacent to shelving for food and food contact equipment storage.
