CASTRO VALLEY, CA — Are you curious about induction cooktops? They are touted for their speed, efficiency, safety, ease of cleaning, and environmental benefits.
The cooktops also have detractors, who cite the higher purchase cost compared to typical gas or electric cooktops, and the need for specialized cookware.
Acterra, a Bay Area non-profit dedicated to local solutions to improve the environment, has put together free Induction Lending Kits that include a portable induction cooktop, a compatible pan, cooktop operating instructions, recipes, and carrying bag.

According to the Hayward lending website, "Induction cooktops are electric cooking stoves that work differently from coil or resistance electric stoves. Induction cooktops operate by heating the pan directly by generating heat from pushing electricity across a magnetic field. This allows you to heat the pan to an exact temperature quickly."
